Job Title: Assistant Food & Beverage Manager

Financial
Accountability
• Maximizes profitability, set targets for the month and maximize
revenues to meet the monthly budgets.
• Monitors the food cost and beverage costs.
• Participates in the preparation of the department performance plan
and yearly budget.
• Monitors and take corrective action to reduce waste, misuse and
breakage of china, glassware, linen and supplies.
• Prepares monthly food and beverage reports.
• Anticipates and forecasts labor costs based on volume of business
schedule accordingly.
• Analyzes the daily Food and Beverage revenue report and point out
the variances and action steps.
• Assists in monitoring and analyzing the activities and trends for
competitive restaurants and bars.
• Monitor the usage of departmental furniture and fixtures.
Conditions of
Work:
To work in a variety of Food & Beverage environments including indoor
and outdoor conditions, as well as exposure to smoky environments and
harsh variations in weather conditions. Some heavy lifting may be
required while on duty.
Role Overview
Purpose: To assist the Director of Food and Beverage in supervising and
coordinating all aspects of the Food and Beverage operation.

Main Duties: • Assists the F&B Director to manage the overall food and beverage
function of all Outlets.
• Oversees the assignment of duties, responsibilities and
workstations to colleagues by Outlet Managers & Assistant Outlet
Managers.
• Observes and evaluates colleagues and work procedures to ensure
quality standards and service is met
• Mentors, develops and provides on-the-job training to Outlet
Managers & Assistant Outlet Managers to strengthen their current
performance and preparation for future advancement
• Reviews financial transactions and monitors budget to ensure
efficient operation, and to ensure expenditures stay within budget
limitations
• Oversees all food and beverage presentations and quality in all
venues
• Inspects food and beverage preparation to maintain quality
standards and hygiene regulations
Administrational
• Ensures all proper documentation is updated
• Assist in the coordination of organizational and administrative
functions in all areas of the Food and Beverage operation.
• To coordinate and execute work assignments among the outlets.
• Assist in setting standard operation procedures and job
descriptions for the department.
• Assist in the coordination of special promotions and provides
administrative support where necessary.
• Ensure up-to-date hard-copies of department SOPs are maintained
in all outlets.
• Update SOPs through Mercury as and when needed.
• Acknowledge the receipt of new or amended documents through
Mercury.
• Communicate new or updated SOP manual documents to relevant
Outlet managers in a timely manner, ensuring they have been
understood.
• Control department forms and records according to the JI
standards for Document Control.
• Assists in the audit cycle of each venue with accounts.
Operational
• Interacts with management and other departments within area of
responsibility and develops working relationships.
• Ensures the service and kitchen areas are clean, properly set up,
sufficiently supplied and equipped.
• Checks event orders in a timely manner, prior to function date,
finalize service details and requirements no later than 24 hours in
advance with last minute changes forwarded to appropriate
sections.
• Prepares the Food and Beverage weekly forecasts.
• Prepares and maintains standard operating procedures.
• Attends and conduct staff meetings where the presence is
required.
• Maintains communication with kitchen and other related Food and
Beverage departments.
• Participates in public relation activities, sales calls, or other
promotional activities designed at enhancing the image of the
department.
• Assists each outlet manager in the planning and implementation of
effective sales and promotional activities to ensure maximum
revenues.
Other Duties
• Attends Food and Beverage Briefings and chair meetings in the
absence of the F&B Director.
• Demonstrates commitment to the development and
implementation of the QMS system and continual improvement of
it’s effectiveness by:
o Communicating to colleagues the importance of meeting
customer as well as regulatory & statutory needs.
o Ensures the availability of resources
o Ensures customer requirements are determined & met.
o Actively promotes an awareness of customer requirements
throughout the organization.
o Ensures that responsibilities and authorities are defined and
communicated within the organization.
o Ensures appropriate communication processes are established.
o Determines the necessary competence for colleagues and provide
training or other actions to satisfy these needs.
o Ensures that colleagues are aware of the relevance and
importance of their activities and how they contribute to the
department objectives.
o Maintains appropriate records of education, training, skills and
experience.
o Provides constant coaching, counseling and discipline to
colleagues to ensure their capability to meet the needs of the
customer and the organization.
o Ensures manning and competence level of selected colleagues is
sufficient for the department to meet the needs of the
organization and customer.
• Attends to any other tasks defined by the Director or EAM Food
and Beverage.
